Carrot cake with frosting (with a vegan alternative!)

Juicy and delicious! This carrot cake is also super easy and quick to make as a vegan alternative!

The grated carrots and applesauce make this cake so incredibly juicy and delicious. For this cake to be vegan, only two ingredients (milk and butter) have to be substituted. The recipe is super simple and ready in no time. Provided a machine does the grating of the carrots ;-)

Personalization with chocolate has never been so easy!

You can easily create texts such as "carrot cake" and "Rüblikuchen" yourself. You can use the "Text Editor" application in the mycusini Club for this purpose. The text "carrot cake" was created using the Aseret font. Just type in the word "carrot" and confirm. Then enter the word "cake". The two texts can then be moved to the desired position, ideally so that the two texts connect at one point.

We did the same thing for the "Rüblikuchen" lettering, except that we used the Terra font.

Rüblikuchen mit Frosting vegan

Ingredients

Carrot cake

Springform pan (20 cm) or brownie pan

250 g Flour
100 g Sugar
250 g Carrots, finely grated
150 g Apple juice
75 ml Vegetable oil (sunflower or canola)
230 ml Milk (vegan alternative: plant milk of your choice)
1 Pinch  Salt
1 tb Cinammon
1/2 Pck. baking powder
1 tbs  Apple Cider Vinegar
1 Pck. Vanilla sugar
100 g Chopped walnuts
Frosting  
200 g Powdered sugar
50 g Butter (vegane Alternative: Margarine)
1 Pck. Vanilla sugar
1 squeeze Lemon juice
1/2 ts Cinammon
1 Pinch Salt

Preparation

Preparation of carrot cake

  1. Preheat oven to 180°C (170°C fan oven)

  2. Grease the brownie or springform pan very well

  3. Mix all dry ingredients (flour, sugar, baking powder, salt, vanilla sugar and cinnamon) together

  4. Mix the grated carrots with the apple sauce, walnuts, oil, milk and vinegar and then slowly stir into the dry ingredients

  5. Pour the batter into the greased cake or brownie pan and bake for 50-60 minutes

  6. After baking, let it cool down before you spread the frosting on it

Tip: The cake is very moist and delicious even without frosting!

 

 Preparation of the frosting

  1. Beat all the ingredients on the highest level for 1-2 minutes. If you want a softer consistency, you can add 1 tbsp milk or vegan plant-based milk and stir briefly

Tip: You can make a frosting of your choice here. Have also made it before with a classic cream cheese frosting and that was delicious too!
